Breakfast Recipes

Here are recipes for some favourite breakfast items mentioned during our pilot project 

Pancakes

What you'll need

200g plain flour

​

2 teaspoons of baking powder

​

2 eggs

​

150ml milk

How to make it

Whisk all ingredients together. 

Heat pan. 

Spoon mix into pan.

Once bubbles appear turn. 

Will only take about 1 minute on the other side.

Scrambled Eggs

What you'll need

2 eggs​

​

Splash of milk

​

Salt and Pepper

How to make it

Whisk together.  Pour into a saucepan.  Continually whisk until they become firm and no liquid left.  Serve on toast.

Overnight Oats

What you'll need

1/3 cup milk​

​

1/4 cup Greek Yoghurt

​

1/4 cup rolled oats

​

2 teaspoons honey

​

2 teaspoons chia seeds

​

1 teaspoon ground cinnamon

​

1/4 cup blueberries

​

How to make it

Put milk, yoghurt, oats, honey, chia seeds and cinnamon in a ½ pint jar with a lid.

Cover and shake until combined. 

Gently mix in the blueberries. 

Cover & refrigerate for at least 8 hours.

Baked Oats

What you'll need

3 cups rolled oats

​

1 cup brown sugar

​

2 teaspoons cinnamon

​

2 teaspoons baking powder

​

1 teaspoon salt

​

2 eggs

​

1 cup milk

​

1/2 cup melted butter

​

2 teaspoons vanilla extract

​

3/4 cup dried cranberries

How to make it

Preheat oven to 175 degrees. 

Mix together the oats, brown sugar, cinnamon, baking powder, and salt in a large bowl. 

Beat in eggs, milk, melted butter and vanilla extract. 

Stir in cranberries. 

Spread into a 9x13 inch baking dish. 

Bake in oven until golden, about 40 minutes.
