Apple Traybake
What you'll need:

225g butter
​
450g cooking apples
​
1/2 lemon, juiced
​
280g golden caster sugar
​
4 eggs
​
How to prepare:
​
Heat oven to 180c. Butter & line a rectangular baking tin. Peel, core & thinly slice the apples, then squeeze the lemon juice over them & set aside.
Put the butter, sugar, eggs, vanilla, flour & baking powder into a large bowl & mix well until smooth. Spread half the mix into the tin. Arrange half the apples over the top of the mix. Add more mix then more apples, layer. Then sprinkle the demerara on the top.
Bake for 45-50 mins until golden & springy to touch. Leave to cool for 10 mins, then turn out of the tin. Cut into squares.

350g self raising flour

2 teaspoons baking powder

Demerara sugar to sprinkle

Banana Bread
What you'll need:
​
3 very ripe bananas
​
3 large eggs
​
100g light brown sugar
​
150ml sunflower or vegetable oil
​
​
How to prepare:
​
Preheat the oven to 180C. Grease & line a loaf tin.
Peel the bananas & mash with a fork. Tip into a large mixing bowl & add the eggs, sugar & oil. Add the flour, spice & baking powder & whisk together until thoroughly combined. Pour into prepared tin.
Bake for 40mins.
Cool in tin for 10 mins then turn out onto a cooling rack.

1 teaspoon mixed spice

1 teaspoon baking powder

Cheese Straws
What you'll need:
​
375g plain flour
​
Pinch of salt
​
225g butter
​
How to prepare:
​
Sift the flour & salt into a bowl.
Using your fingertips, rub the butter until all the lumps are gone & the texture is like breadcrumbs.
Stir in the cheese, mustard powder & yolks.
Add 4-5tbsp of cold water & mix to a firm dough.
Wrap in cling & chill for 30mins.
Preheat oven to 190C.
Line a baking tray with baking paper.
Roll out the dough into a square - roughly the thickness of a £2 coin.
Cut the square in half, then cut each half into 1cm strips.
Transfer carefully to the tray & bake for 10-15 minutes, until crisp then leave to cool.

Frozen Berry Yoghurt
What you'll need:
250g frozen mixed berries
​
250g Greek yoghurt
​
1 tablespoon
How to prepare:
​
Blend the berries, yoghurt & honey in a food processor for 20 seconds. Instantly frozen because of the berries. Serve.
